Plant plankton are essential for the ecological balance of oceans and rivers and are an indispensible partof the food chain for fish, crustaceans, and mollusks. And if one day they became part of our daily diet? Chef Marc Foucher thinks they could and enlisted the expert help of Pierre Mollo to determine their composition of proteins, vitamins, oligominerals, and omega 3 fatty acids that would make them nutritionally valuable for humans.
