Became dean of the School of Agrarian Science, University of Bologna in 2005 after having taught in Europe and the United States. He created and developed the Last Minute Market project which has since become a spin-off the University of Bologna and involves the sustainable recycling of food and other consumer goods. He has authored numerous books, including Lezioni di ecostile - Consumare, crescere, vivere, and co-authored with Luca Falasconi, Il libro nero dello spreco in Italia: il cibo.
